This fantastic red wine, produced by the Boffa family in Pajè, comes from a region particularly rich in calcareous marl soil and limestone, concentrated in a plot comprising 1.83 hectares. The limited production is clearly evident, and with a south/southwest-facing position, the vineyard is perfectly exposed to catch the growing season’s sunshine, thus ripening the grapes to their ideal polyphenolic content.
The fermentation of this wine is completed in stainless steel tanks until the end of malolactic fermentation. This wine has been aged for 18 months in Slovakian oak barrels, followed by a passage in steel tanks for a few months before bottling.
TASTING NOTES: Dry, full-bodied, with sweet and enjoyable tannins. On the nose, it is intense and fresh, with good finesse.
